Black and White Lasagna

1 1/2pounds Italian sausage, cooked and crumbled
1-- sweet onion, finely chopped (optional)
1/3cup olive oil
15ounces jar Alfredo sauce (or homemade Alfredo sauce)
6ounces can California Black Ripe Olives
6cups grated mozzarella cheese
16ounces ricotta cheese or small curd cottage cheese
2-- large eggs
1teaspoon garlic
1box lasagna noodles (pre-cooked or regular)


Saute onion in olive oil. Stir in cooked Italian sausage, alfredo sauce, and olives sliced in half. In a separate bowl, stir the eggs with a fork, then add ricotta cheese, garlic powder, and 2 cups grated mozzarella cheese. Prepare large, deep baking pan (9×13 or larger) with olive oil. Layer in this order: lasagna noodles, some meat sauce mixture, some cheese mixture, then sprinkle with one cup grated cheese. Repeat that layering again. If your pan is deep enough, make one more layer. The top layer should be mozzarella cheese sprinkled with black olive slices. Cover with foil and bake at 350 degrees for 45 minutes, or until heated through and bubbly. Let stand 15 minutes before serving. Makes 10-12 servings. Perfect for family meals, buffets, or other gatherings. Freezes well in individual servings to be warmed and enjoyed by a person or couple for a yummy meal after a long day.
