Baked Cheese Soy Grits

  • Yield: 4 servings


1 3/4cups chicken stock
3/4cup Bob’s Red Mill soy grits
1/2teaspoon kosher salt
3ounces processed American cheese (such as Velveeta), cubed
3 eggs, well beaten
1/4teaspoon ground black pepper
1/4teaspoon Worcestershire sauce
1/2cup grated carrot
1/2cup minced celery
1/4cup minced onion


  1. Preheat oven to 350F. Grease a 1 1/2 quart casserole dish.
  2. Bring broth to a boil in a saucepan. Stir in grits, cover and reduce heat. Simmer 5 minutes or until done, stirring occasionally.
  3. Combine grits with remaining ingredients and pour into prepared dish and bake for 30 minutes or until lightly browned.
