Chicken Salad with Fruit & Nuts

1cup mayonaise
1/4cup + 2 tablespoon apple cider vinegar
1/2teaspoon cinnamon
2tablespoons sugar
1tablespoon olive oil
whole Rotisserie Style Chicken, shredded
3/4cup crushed pineapple (with juice)
1cup toasted pecans, coarsely chopped
3/4cup dried cranberries
1/2cup diced red bell pepper


Whisk together the first 5 ingredients. Toss with the remaining ingredients. Serve on a bed of spinach
