- 2 cinnamon sticks
- 2 cup whole-grain freekeh soaked for 30 minutes, rinsed, and drained
- 1 tbsp curry powder mild
- 2 2 pieces star anise
- 2 tsp garlic finely minced
- 0.5 cup tomato(es) diced, fresh
- 2 tsp fresh ginger finely minced
- 1 tsp ghee
- 1 cup red onions finely diced
- 1 tsp sunflower oil 1 tsp / 5 g
- 0.5 tsp black pepper ground
- 2 tbsp water cold
- 12 oz frozen petite peas cooked in boiling salted water for 3 minutes
- 3.5 cup vegetable or chicken stock low-sodium
- 1 tsp salt
- 12 oz baby spinach washed and blanched
- 1 tbsp cilantro chopped
- 0.5 tsp garam masala
