- 0.25 cup olive oil
- 0.5 cup walnuts toasted chopped
- 2 cup lentils can use any color
- 6 cup water
- 1 clove garlic minced or grated
- 1 large lemon Zest and juice
- 1 tbsp fresh parsley minced
- 1 tsp sweet curry powder
- 1 tbsp honey
- 1 cup grape tomatoes halved
- 1 medium orange or yellow bell pepper seeded and diced
- 2 cup mesclun or mixed baby field greens
