- 1 cup raw cashews, soaked for at least 4 hours if you do not have a high-powered blender (see step 1)
- 2 to 4 tablespoons honey or maple syrup
- Handful of fresh mint leaves (plus a few more sprigs for garnish) or 1/2 teaspoon peppermint extract
- 2 tablespoons matcha green tea
- 1 tablespoon vanilla extract
- Dash of salt
- 4 cups water, divided
