Scalloped Sweet and White Potatoes
Can't decide between white potatoes and sweet? Have both in this creamy gratin.
1 lb White Potato
1 lb Sweet Potato
2 T Butter
3 T All Purpose Flour
2½ cup 2% Milk
4 oz Aged White Cheddar Cheese
4 oz Comté Cheese
2 oz Romano Cheese
- Cover potatoes with cold water in a large saucepan. Bring to a boil, reduce heat and simmer, uncovered 10 minutes. Drain well in a colander.
- Preheat oven to 350F.
- Melt butter in a medium saucepan over medium heat. AddÂ add flour and whisk until smooth. Add milk, stirring until thickened, about 10 minutes. Add Cheddar cheese and Â stir until melted. Combine potatoes and cheese sauce in a shallow gratin dish. Sprinkle with Romano cheese. Cover with aluminum foil and bake 20 minutes. Uncover and bake 10 minutes.
