Pasta with Summer Squash and Feta
A three-ingredient pasta that is ridiculously easy and wonderfully fragrant.
- 4 cup Sliced Yellow Squash
- or 4 cup Sliced Zucchini
- 2 T Olive Oil
- 4 oz Feta Cheese
- 1 Basil Bunch (optional)
- 8 oz Penne Pasta
- Sauté squash in olive oil over high heat until browned, about 10 minutes. Top with feta cheese. Cover and let stand 5 minutes, until cheese melts. Toss with pasta and fresh basil.
