Pasta with Summer Squash and Feta

A three-ingredient pasta that is ridiculously easy and wonderfully fragrant.

Ingredients (6)

  • 4 cup Sliced Yellow Squash
  • or 4 cup Sliced Zucchini
  • 2 T Olive Oil
  • 4 oz Feta Cheese
  • 1 Basil Bunch (optional)
  • 8 oz Penne Pasta

  1. Sauté squash in olive oil over high heat until browned, about 10 minutes. Top with feta cheese. Cover and let stand 5 minutes, until cheese melts. Toss with pasta and fresh basil.
