Healthy Pineapple and Mango Popsicles

Pineapple and mango are the star ingredients in these pretty popsicles.

  • 4 cup Coconut Water
  • 1 cup Fresh Pineapple
  • or 1 cup Pineapple, Frozen
  • 1 cup Mango, Cubed
  • ¼ cup Shredded Coconut

Directions

  1. In a blender, blend coconut water with pineapple, mango and shredded coconut until smooth. You can choose to leave some fruit chunks in this mixture if you’d like.
  2. Pour the mixture into the popsicle mold. If your mold has slots for sticks, you can insert these before freezing, if not, freeze for about 2 hours, until slightly hard and then put the popsicle stick in the middle. Continue to freeze until firm—overnight is suggested.
