Easy Kale Salad

Five ingredients are all that's needed for this healthy and simple salad.

Salad

  • 3 cup Kale, Chopped
  • 3 T Dried Goji Berries
  • ½ Sweet Potato, Whole
  • ½ cup Lentils, Cooked
  • ¼ cup Walnuts

Dressing

  • 2 T Olive Oil
  • 1 T Dijon Mustard
  • 1 Lemon

Directions

  1. Toss massaged kale with goji berries, sweet potatoes, lentils and walnuts until combined.
  2. In a small bowl, whisk the dressing ingredients together with a fork. Pour over the salad.
