Luau Baked Beans

Baked beans get a tropical kick with sweet pineapple and zesty cilantro.

Chock-full of bacon, ground chuck, onion, pineapple and pinto beans, these luau-ready baked beans are bursting with tons of flavor and great texture.

  • 1/4 cup vegetable oil
  • 1/2 pound chopped bacon
  • 1 pound ground chuck
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon pepper
  • 1 tablespoon cayenne
  • 1 1/2 cup ketchup
  • 1 1/2 cup barbecue sauce
  • 3 cup brown sugar
  • 1/4 cup bourbon
  • 1/4 cup liquid smoke
  • 2 tablespoon yellow mustard
  • 6 15 ounce pinto beans
  • 1 20 ounce diced pineapple
  • 1/2 cup chopped fresh cilantro

Directions

  1. Place cast iron pot in bed of hot coals. Heat oil and add bacon, ground chuck and onions. Stir and cook until lightly browned and softened. Add chili powder, cumin, garlic, pepper and cayenne. Stir and cook until fragrant.
  2. In a large bowl, mix ketchup, barbecue sauce, sugar, bourbon, liquid smoke and yellow mustard. Pour mixture into pot. Stir to combine. Add beans, pineapple and cilantro, stir to combine.
  3. Place lid on pot and cover lid with hot coals. Cook 30 minutes.
