Chilled Avocado Soup

A super creamy chilled soup for summer.

Ingredients (13)

  • 2 Avocados
  • 2 cup Low Sodium Vegetable Broth
  • 4 oz Canned Green Chiles
  • ½ cup Low Fat Plain Yogurt
  • or ½ cup Light Sour Cream
  • or ½ cup Low Fat Plain Kefir
  • 6 Green Onions
  • 1 T Fresh Lemon Juice
  • or 1 T Bottled Lemon Juice
  • or 1 T Fresh Lime Juice
  • or 1 T Bottled Lime Juice
  • 2 tsp Dry Sherry
  • ¼ tsp Salt

Directions

  1. Cut avocados into halves and remove pits. Spoon avocado into a blender jar, add remaining ingredients (except garnish), and purée until creamy. You may chill the soup for up to 2 hours before serving or serve immediately. Makes about 4 1/2 cups.
