Chilled Avocado Soup
A super creamy chilled soup for summer.
Ingredients (13)

2 Avocados

2 cup Low Sodium Vegetable Broth

4 oz Canned Green Chiles

½ cup Low Fat Plain Yogurt

½ cup Light Sour Cream

½ cup Low Fat Plain Kefir

6 Green Onions

1 T Fresh Lemon Juice

1 T Bottled Lemon Juice

1 T Fresh Lime Juice

1 T Bottled Lime Juice

2 tsp Dry Sherry

¼ tsp Salt
Directions
- Cut avocados into halves and remove pits. Spoon avocado into a blender jar, add remaining ingredients (except garnish), and purée until creamy. You may chill the soup for up to 2 hours before serving or serve immediately. Makes about 4 1/2 cups.
