Easy Bacon Mushroom Frittata
There is nothing more versatile or delicious than a fresh egg.
Ingredients (4)
- 1/2 pound bacon, diced
- 1 onion
- 4 medium shiitake mushrooms, chopped
- 12 eggs
Directions
- Heat broiler.
- Heat a cast-iron skillet over medium-high heat. Add bacon and cook until fat begins to render. Add onion and sauté until onions are soft and fragrant. Add mushrooms and sauté until soft.
- Beat eggs in a separate bowl and pour into skillet, mixing quickly with other ingredients. Place skillet in oven and broil until top is golden brown, about 10 minutes.
