Cucumber and Avocado Gazpacho
The twist on the classic cold vegetable soup dish from Andalusia uses avocado for a delightfully creamy texture.
Hint: Chill all ingredients before preparing.
- 4 cup Low Sodium Chicken Broth
- 1 Avocado
- 1 cup Chopped Cucumber
- ½ cup Chopped Chives
- ½ cup Chopped Parsley
- ½ cup Chopped Basil
- ½ cup Chopped Dill
- 1 cup Plain Yogurt
- ¼ tsp Salt
- 1 tsp Freshly Ground Black Pepper
- 6 T Sour Cream
- 2 T Chopped Chives
- Place chicken broth, avocado, cucumber, herbs, yogurt, salt and pepper in blender or food processor. Purée until creamy. Chill.
- Serve in chilled soup bowls. Garnish each with 1 tablespoon sour cream and 1 teaspoon chopped chives.
