  • 1 T Olive Oil
  • 1 Walla Walla Onion
  • or 1 Vidalia Onion
  • 2 Garlic Cloves
  • 1 Swiss Chard Bunch
  • ¼ cup Chopped Basil
  • or ¼ cup Chopped Oregano
  • or ¼ cup Chopped Parsley
  • 6 Eggs
  • ½ cup Grated Parmesan Cheese
  • or ½ cup Grated Romano Cheese
  • or ½ cup Grated Asiago Cheese
  • ¼ tsp Salt
  • ¼ tsp Freshly Ground Black Pepper

Directions

  1. Heat oil in a medium skillet. Add onion and garlic; sauté 5 minutes.
  2. Add chard and herbs. Sauté until wilted, about 2 minutes. Add eggs, cheese, salt and pepper. Cook, stirring, until eggs are set.
