Smoky White Bean Chicken Chili
A super simple, comforting chili recipe. Great for cozy nights on the couch.
Ingredients (12)
- 1 (12-ounce) can tomatillos, diced
- 2 (14 1/2-ounce) cans diced fire-roasted tomatoes
- 3 garlic cloves, minced
- 1/4 cup tomato paste
- 1 teaspoon cumin
- 1/4 teaspoon white pepper
- 1 teaspoon salt
- 2 (15-ounce) cans white beans, such as cannellini, rinsed and drained
- 2 chicken breasts, cooked and chopped or shredded
- 4 slice smoked applewood bacon, cooked and crumbled
- 1 cup beer
- 1/2 teaspoon Tabasco
Directions
- Combine tomatillos, tomatoes, garlic, tomato paste, cumin, white pepper and salt in a large saucepan. Bring to a simmer and cook 30 minutes. Add beans, chicken, bacon and beer and cook 30 minutes. Stir in Tabasco. Makes about 10 cups.

- 0.75 oz. Lime Juice
- 3.5 oz. Ginger Beer
- 2 dashes of Bitters
- Ice

- Sprigs of Rosemary Garnish
