Toasted Hazelnut and Carrot Stir-fry

A super simple way to dress up weeknight carrots.

Ingredients (9)

  • 2 T Ghee (Clarified Butter)
  • or 2 T Vegetable Oil
  • or 1 T Ghee (Clarified Butter)
  • or 1 T Vegetable Oil
  • 1 lb Carrots
  • ½ tsp Salt
  • ½ tsp Freshly Ground Black Pepper
  • ½ tsp Ground Nutmeg
  • ¼ cup Chopped Hazelnuts


  1. Peel and cut carrots into matchstick-size pieces.
  2.  IIn a large wok or frying pan, heat butter and/or oil over high heat. Add all remaining ingredients except hazelnuts. Stir until carrots are coated and just begin to brown. Add nuts and stir fry 1 minute longer. Serve and enjoy immediately!
