Mediterranean Tuna Salad

  • 3 Eggs, Hard Boiled
  • 6 oz Light Tuna, Water Packed
  • 2 T Red Onion, Chopped
  • ¼ cup Kalamata Olives, Pitted
  • or ¼ cup Black Olives, Pitted
  • ¼ cup Feta Cheese, Crumbled
  • 2 tsp Extra Virgin Olive Oil
  • ½ tsp Red Wine Vinegar
  • 1 tsp Black Pepper, Freshly Ground
  • 4 cup Salad Greens

  1. Combine eggs, tuna, onion, olives and feta cheese. Combine olive oil and vinegar in a small bowl; whisk until well blended. Add to tuna mixture. Season with pepper. Serve over mixed greens.
