Thai Black Bean and Corn Salad
A tangy salsa-like bean salad that features corn and red bell pepper.
Ingredients (13)

2 cup Fresh Corn Kernels

½ cup Diced Celery

16 oz Canned Black Beans

½ cup Diced Red Bell Pepper

2 Garlic Cloves

½ cup Diced Red Onion

¼ cup Chopped Cilantro

1 Jalapeño Pepper

1 tsp Chopped Fresh Ginger

2 T Unseasoned Rice Vinegar

3 T Sesame Oil
-
1 T Fresh Lime Juice

1 T Bottled Lime Juice
Directions
- Combine all ingredients, except sesame oil, rice vinegar and lime juice, in a large bowl.
- Whisk together oil, vinegar and lime juice. Pour over bean mixture and toss to combine.
- Chill until serving time.
