Thai Black Bean and Corn Salad

A tangy salsa-like bean salad that features corn and red bell pepper.

Ingredients (13)

  • 2 cup Fresh Corn Kernels
  • ½ cup Celery, Diced
  • 16 oz Black Beans, Canned
  • ½ cup Red Bell Pepper, Diced
  • 2 Garlic Cloves
  • ½ cup Red Onion, Diced
  • ¼ cup Chopped Cilantro
  • 1 Jalapeño Pepper
  • 1 tsp Fresh Ginger, Chopped
  • 2 T Unseasoned Rice Vinegar
  • 3 T Sesame Oil
  • 1 T Fresh Lime Juice
  • or 1 T Bottled Lime Juice

Directions

  1. Combine all ingredients, except sesame oil, rice vinegar and lime juice, in a large bowl.
  2. Whisk together oil, vinegar and lime juice. Pour  over bean mixture and toss to combine.
  3. Chill until serving time.
