Maria’s Watermelon Gazpacho
Ingredients (20)
- 4 ½ cups seedless watermelon
- 2 tablespoons fresh squeezed lime juice
- 1 tablespoon lime zest
- 1 teaspoon salt
- 1 to 2 cloves minced garlic
- 1 cup ripe tomato
- 1 cup peeled or unpeeled seedless cucumber
- ½ cup total sweet yellow, red and orange pepper, cubed into ½ inch pieces (makes great color)
- 3 tablespoons minced red onion
- 1 tablespoon red-wine vinegar
- 1/3 cup extra-virgin olive oil
- Pepper to taste
- 2 tablespoons minced cilantro or parsley
- Pinch sugar
- Mint leaves
- ½ cup watermelon ½ inch cubed
- ½ cup pineapple ½ inch cubed
- ½ cup raspberries
- Set aside cubed watermelon
- Set aside cubed pineapple
