  • 2/3 Cup all-purpose flour, seasoned well with salt and pepper

  • 1 cup bread crumbs
  • 1 cup grated Parmesan
  • 1 tablespoon dried parsley
  • 2 Teaspoons garlic powder
  • 1 pound of cooked spaghetti
  • 6 chicken cutlets (4-5 oz. each)
  • 8 ounces fresh mozzarella, sliced
  • 1/3-1/2 cup olive oil, for frying
