Chicken Parmesan
Ingredients (21)
- Sauce:
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 garlic cloves, chopped
- 1 (28-ounce) jar marinara sauce
- 1/2 Cups basil, roughly torn (reserve some for topping at the end)
- 1/2 Cup Kalamata Olives, pitted and halved
- 1/2 Teaspoon red pepper flakes
- Pinch of sugar
- Salt and pepper to taste
- Breading:
- 2/3 Cup all-purpose flour, seasoned well with salt and pepper
- 2 large eggs, whisked
- 1 cup bread crumbs
- 1 cup grated Parmesan
- 1 tablespoon dried parsley
- 2 Teaspoons garlic powder
- 1 pound of cooked spaghetti
- 6 chicken cutlets (4-5 oz. each)
- 8 ounces fresh mozzarella, sliced
- 1/3-1/2 cup olive oil, for frying
