  • 4 medium beets, roasted, peeled, and sliced
  • 4 ounces goat cheese, crumbled
  • 1/2 Cup pistachios, roughly chopped
  • Greens (I used spinach)
  • Dressing:
  • 1/4 Cup red wine vinegar
  • 1/3 Cup olive oil
  • Pinch of salt and pepper
  • *Roasted Garlic Potatoes:
  • Serves 4-6 (leftovers are not a bad thing):
  • 2-3 pounds new potatoes, washed and halved
  • 1 head garlic, roasted
  • 1/4 Cup butter
  • 1/2 Cup milk
  • Salt and pepper
  • Serves 2 (plus some leftovers):
  • 1 pound flank steak
  • 2 Tablespoons oil (for cooking steak)
  • 2 Tablespoons pink peppercorns
  • 2 Tablespoons butter
  • 1/2 Cup red wine
  • 1 shallot, minced
  • Salt and pepper
