Meat and Potatoes

- Serves 4:
- 4 medium beets, roasted, peeled, and sliced
- 4 ounces goat cheese, crumbled
- 1/2 Cup pistachios, roughly chopped
- Greens (I used spinach)
- Dressing:
- 1/4 Cup red wine vinegar
- 1/3 Cup olive oil
- Pinch of salt and pepper
- *Roasted Garlic Potatoes:
- Serves 4-6 (leftovers are not a bad thing):
- 2-3 pounds new potatoes, washed and halved
- 1 head garlic, roasted
- 1/4 Cup butter
- 1/2 Cup milk
- Salt and pepper
- Serves 2 (plus some leftovers):
- 1 pound flank steak
- 2 Tablespoons oil (for cooking steak)
- 2 Tablespoons pink peppercorns
- 2 Tablespoons butter
- 1/2 Cup red wine
- 1 shallot, minced
- Salt and pepper
