Chicken Skillet Pie

  • Biscuits:
  • 1 1/2 Cups all-purpose flour
  • 1 1/2 Teaspoons baking powder
  • 1/2 Teaspoon baking soda
  • 1/2 Teaspoon kosher salt
  • 2/3 Cup buttermilk
  • 4 Tablespoons unsalted butter, melted (only butter in the recipe)
  • Filling:
  • 6 Tablespoons all-purpose flour
  • 1 1/2 pounds chicken, trimmed of fat.  You could use breasts or thighs
  • 2 Tablespoons vegetable oil
  • 1 onion, minced
  • 2 large carrots, peeled and sliced into 1/4 inch pieces
  • 2 red peppers, seeded and roughly chopped
  • 1 rib celery, cut into 1/4 inch slices
  • 3 cloves garlic, minced
  • 4 Cups chicken broth
  • 2 bay leaves
  • 4 ounces spinach, chopped roughly
  • 1/2 Cup frozen peas
  • 1/4 Cup half-and-half or cream
  • 2 Tablespoons fresh parsley (optional)
  • 2 Teaspoons fresh thyme (optional)
  • Salt and pepper
