Cast Iron Paella
Ingredients (22)
- 2 ounces dried shiitake mushrooms
- 3 Cups water
- 6-8 Tablespoons olive oil
- 2 pounds chicken, cubed (you could sub 1 pound of shrimp for one pound of chicken)
- 1 pound mixed mushrooms, I used a mix of shiitake and oyster
- 1 onion, diced
- 4 cloves garlic, minced
- 1 1/2 Cups short grain white rice (paella rice)
- 1 15 ounce can diced tomatoes
- 1 Tablespoon chili powder
- 1 Teaspoon smoked paprika
- 1/2 Teaspoon saffron threads, soaked in a bit of warm water
- 2 Cups chicken broth
- Chopped parsley (garnish)
- Allioli recipe (Served with paella):
- 4 garlic cloves, halved and center germ removed
- 1/2 Teaspoon fine salt
- 2 large egg yolks
- 3 Tablespoons water
- 2 Tablespoons sherry or red wine vinegar
- 1 Cup light olive oil
- Fresh black pepper
