  • 2 1/4 Cups all-purpose flour, plus a bit for rolling
  • 1 Teaspoon salt
  • 1 Cup (2 sticks) unsalted butter, cold and chopped up
  • 6 Tablespoons of water (approximately)
  • Filling:
  • Makes 1 quiche (double for two)
  • 3 large onions, sliced thinly
  • 4 Tablespoons butter or oil
  • 5 eggs, room temperature
  • 3/4 Cup heavy cream, slightly warm
  • 3/4 Cup milk, slightly warm
  • Salt and pepper
  • 1 Teaspoon fresh thyme or 1/2 Teaspoon dried (kinda optional)
