Chicken Fried Steak

  • 1 pound steak, I like to use a bottom round steak but you can use a lot of different cuts.  Choose a leaner cut and slice it about 1/4 inch thin.
  • 2 Cups all-purpose flour
  • 1 Tablespoon paprika
  • 1 Teaspoon cayenne
  • 2 Cups buttermilk (or you can use a few eggs)
  • Salt and pepper
  • A few cups neutral oil for frying
  • For Gravy:
  • 4 Tablespoons flour
  • 2 Tablespoons butter
  • 2 Tablespoons oil from frying
  • 2-3 Cups milk
  • Salt and pepper
