Mushroom Meatloaf
Ingredients (33)
- The Loaf:
- 2 1/2 pounds assorted mushrooms (I used a mix of cremini and white button), chopped
- 3 large leeks, cleaned, quartered, and chopped
- 6 cloves garlic, minced
- 2 Tablespoons olive oil
- 2 large eggs
- 1 Cup bread crumbs
- 2 Tablespoons heavy cream
- 1 Tablespoon soy sauce
- 1/2 Teaspoon cayenne
- 1 Teaspoon garam masala (optional)
- 1 Teaspoon salt
- 1 Teaspoon pepper
- The Gravy:
- 1 1/2 pounds mushrooms, sliced thin (I used all cremini for this)
- 1 medium onion, chopped
- 2 celery stalks, chopped
- 2 large carrots, chopped
- 6 cloves garlic, minced
- 2 Tablespoons olive oil
- 1 Tablespoon fresh thyme
- 1 Cup dry red wine
- 6 Cups low-sodium vegetable stock
- 2 Tablespoons butter, soft
- 2 Tablespoons flour
- 1/4 Cup cream
- Glaze for Loaf:
- 1/3 Cup ketchup
- 1 Teaspoon soy sauce
- 1 Teaspoon chili sauce (like sriracha. You could up this if you want.)
- 1 Teaspoon vegetable oil
- 1 Tablespoon brown sugar
- Pinch of salt and pepper
