
Shrimp Scampi
Ingredients (11)
- 16 ounces linguine pasta
- 1 pound shrimp, peeled and deveined
- ⅓ cup olive oil
- salt to taste
- ¼ teaspoon ground black pepper
- 12 cloves garlic, minced
- ½ cup butter
- ½ cup dry white wine
- 1 lemon, zested and juiced
- 1 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
Directions
- Bring a large pot of lightly salted water to a boil. Cook pasta until tender yet firm to the bite, 9 to 11 minutes. Reserve 1 cup pasta water and set aside.
- Drain pasta and transfer to a serving bowl and cover to keep warm.
- Mix shrimp and olive oil in a large bowl with salt and pepper until evenly coated.
- Heat a large saucepan over medium heat. Sauté shrimp and garlic for 1 minute.
- Add butter to shrimp mixture. Cook and stir until shrimp turn pink and are cooked through, 3 to 5 minutes.
- Stir white wine into shrimp mixture; bring to a boil. Cook and stir for 30 seconds; add lemon zest and juice.
- Combine shrimp mixture with pasta and add Parmesan cheese and pasta water, stirring until well combined.
- Garnish shrimp scampi with parsley before serving.
