Shrimp Scampi

Ingredients (11)

  • 16 ounces linguine pasta
  • 1 pound shrimp, peeled and deveined
  • ⅓ cup olive oil
  • salt to taste
  • ¼ teaspoon ground black pepper
  • 12 cloves garlic, minced
  • ½ cup butter
  • ½ cup dry white wine
  • 1 lemon, zested and juiced
  • 1 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Directions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta until tender yet firm to the bite, 9 to 11 minutes. Reserve 1 cup pasta water and set aside.
  2. Drain pasta and transfer to a serving bowl and cover to keep warm.
  3. Mix shrimp and olive oil in a large bowl with salt and pepper until evenly coated.
  4. Heat a large saucepan over medium heat. Sauté shrimp and garlic for 1 minute.
  5. Add butter to shrimp mixture. Cook and stir until shrimp turn pink and are cooked through, 3 to 5 minutes.
  6. Stir white wine into shrimp mixture; bring to a boil. Cook and stir for 30 seconds; add lemon zest and juice.
  7. Combine shrimp mixture with pasta and add Parmesan cheese and pasta water, stirring until well combined.
  8. Garnish shrimp scampi with parsley before serving.
