- 4 cups (947ml) cider vinegar
- 1 1/2 cups sugar (10 1/2 ounces; 300g)
- 1 ounce candied ginger
- 1 tablespoon (9g) Diamond Crystal kosher salt; for table salt, use half as much by volume or the same weight
- 5 cloves
- 2 allspice berries
- 1 cinnamon stick
- One 1-inch strip lemon rind
- 2 pounds (907g) trimmed watermelon rind, cut into 1.5-inch (4cm) chunks (see notes)
