- FOR THE MEATBALLS:
- 1 pound lean ground beef
- 1/2 cup dry long grain white rice
- 1/4 cup chopped fresh cilantro
- 3 tablespoons chopped fresh mint
- 1 teaspoon salt
- 1 teaspoon ground cumin

- 1 large egg, lightly beaten
- FOR THE SOUP BASE:
- 2 tablespoons avocado oil, or vegetable oil
- 1 yellow onion, diced
- 2 carrots, cut into thin coins
- 1 jalapeno pepper, diced
- 3 tablespoons chopped fresh cilantro
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (8 ounces) tomato sauce
- 6 cups vegetable broth
- 1 cup frozen or canned green peas
- 1 cup snap peas
- salt and fresh ground black pepper, to taste
