- 5 tablespoons canola oil, divided
- 2 cups yellow onion, chopped
- 4 cups shredded Colby jack cheese, from 2 (8-ounce blocks)
- 16 soft taco flour tortillas (8-inch)
- 2 tablespoons chili powder
- 1 tablespoon cornstarch
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- ⅛ teaspoon cayenne pepper
- 1 1/2 cups pico de gallo
