- 1 teaspoon Cajun or Creole seasoning, or seasoned salt
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups milk, or a mix of milk and chicken broth
- 1 (15-ounce) can artichokes, drained and coarsely chopped
- 1 cup shredded Parmesan cheese, divided
- 2 cups shredded sharp cheddar cheese, divided
- 1 tablespoon chopped fresh parsley, optional
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon salt, or to taste
- 1/2 cup soft breadcrumbs
- 1 tablespoon unsalted butter, melted
