  • 1 teaspoon Cajun or Creole seasoning, or seasoned salt
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk, or a mix of milk and chicken broth
  • 1 (15-ounce) can artichokes, drained and coarsely chopped
  • 1 cup shredded Parmesan cheese, divided
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 tablespoon chopped fresh parsley, optional
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt, or to taste
  • 1/2 cup soft breadcrumbs
  • 1 tablespoon unsalted butter, melted
