 - 2 tablespoons vegetable oil, or canola or sunflower oil
 - 6 curry leaves
 - 1 teaspoon cumin seeds
 - 1 teaspoon black mustard seeds
 - 2 green chilies, slit
 - 1 small onion, finely chopped
 - 1 teaspoon grated ginger
 - 1 teaspoon garlic paste
 - 1 tablespoon ground coriander
 - 1 teaspoon raw mango powder
 - 1/2 teaspoon ground turmeric
 - 1/2 teaspoon red chili powder
 - 1 teaspoon tamarind paste
 - Salt, to taste
 - 1 tablespoon grated jaggery
 - Cilantro leaves, chopped, for garnish
