Marinated Beef Rendang Recipe

- 1 tablespoon coriander seeds
- 1 tablespoon black peppercorns
- 1 tablespoon crushed galangal
- 1 whole garlic, bruised and peeled
- 6 bird's eye chilies, roughly chopped
- 12 shallots, roughly chopped
- a piece of turmeric, about an inch cube
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground nutmeg
- 1-1/2 k. of stewing beef, cut into 3-inch cubes
- 1 cup freshly grated coconut or
- 1/2 cup desiccated coconut
- 4 tablespoon vegetable cooking oil
- 1 onion, chopped
- 3 stalks lemongrass (white portion only), bruised
- 2 cinnamon sticks
- 1 makrut lime leaf
- 5 to 6 cups coconut milk
- 2 tablespoons tamarind paste
- 2 tablespoons of grated palm sugarfish sauce, to taste
