- 10 cups water
- 1 large onion, chopped
- 1 clove garlic, minced, optional
- 1 bay leaf
- 6 whole peppercorns
- 1 large carrot, peeled and sliced
- 1 large potato, peeled and diced
- 1 ounce dried mushrooms, or 1/2 cup fresh sliced mushrooms
- 2 pounds sauerkraut, drained and rinsed or unrinsed, to taste
- 2 tablespoons all-purpose flour
- 2 tablespoons sour cream
- Salt, to taste, optional
- Dill, or parsley, chopped, for garnish
