Zucchini Squares

  • Yield: 2 dozen


1cup biscuit baking mix
1/2cup grated Parmesan cheese
2teaspoons dried parsley
1/2teaspoon salt
1/2teaspoon oregano
1/4teaspoon garlic powder
1/2cup vegetable oil
4-- eggs, slightly beaten
dash pepper
3cups chopped, unpeeled zucchini


  1. Preheat oven to 350F.  Mix all ingredients together and spread evenly into a greased 9×13-inch pan.  Bake 25 minutes or until golden brown.  Cut into 2-inch squares and serve warm.
