Zucchini Linguine

2tablespoons olive oil
1small onion, chopped
2 garlic cloves, chopped
1medium zucchini, shredded
2tablespoons white wine
8ounces linguine, cooked and drained (about 3 3/4 cups)
1tablespoon butter
1/2teaspoon salt
Freshly ground black pepper
1/2cup grated Romano cheese


  1. Heat olive oil in a large skillet. Add onion and garlic and sauté about 10 minutes. Add zucchini and wine and cook 5 minutes. Add hot pasta, butter, salt and pepper. Serve with grated cheese.
