Za’tar Roasted Chicken

Ingredients

4 (6-ounce) boneless, skin-on chicken breasts
2tablespoons Za'tar seasoning
1tablespoon olive oil
2cups red onions, wedged into 1-inch thick slices
2cups carrots, peeled and cut into 3/4-inch chunks
1cup California Black Ripe Olives

Instructions

  1. Season chicken breasts on both sides with 1 1/2 tablespoons of Za’tar seasoning and set aside. Heat oil in a large ovenproof skillet over medium-high heat. Place chicken breasts skin side down in the skillet and brown for 2 to 3 minutes on each side, then transfer to a clean plate and set aside. Stir onions and carrots into pan and cook for 3 to 4 minutes over medium-high heat until lightly browned. Mix in olives and remaining Za’tar seasoning and return chicken to pan, skin side up. Place pan into a 400F oven and roast for 15 to 18 minutes until chicken is cooked through and vegetables are tender. Serve hot or room temperature.
Note: Za’tar is a Mediterranean seasoning mix that can be purchased at Mediterranean grocers. You may make your own by combining 2 teaspoons dried thyme, 2 teaspoons dried oregano, 2 teaspoons toasted sesame seeds and 1/2 teaspoon kosher salt.
