You are here: Home » Recipes » Yogurt Parfait with Pomegranate-Berry Compote and Pistachio Granola Yogurt Parfait with Pomegranate-Berry Compote and Pistachio Granola Recipe by POM Wonderful Yield 4 servings PrintEmail Ingredients Pomegranate-Berry Compote:1/2 cup pomegranate arils1/2 cup strawberries, sliced1/2 cup raspberries1/4 cup blueberries2 tablespoons honey1/2 tablespoon mint, choppedParfait:1/4 cup pomegranate arils16 ounces nonfat yogurt4 tablespoons granola2 tablespoons pistachios honey, to taste purple basil, for garnish freshly torn mint, for garnish Instructions To prepare the compote: Combine all berries and arils, then add honey and mint. Mix gently and let sit for 10 minutes before serving. To prepare the parfait: Start with a small layer of compote. Add a layer of yogurt, then add a layer of pistachio and granola. Continue layering until two-thirds of the glass has been filled. Sprinkle the top layer of granola and compote together. Drizzle with honey and add torn mint and purple basil for garnish.
