Yogurt Parfait with Pomegranate-Berry Compote and Pistachio Granola

Pomegranate-Berry Compote:
1/2 cup pomegranate arils
1/2 cup strawberries, sliced
1/2 cup raspberries
1/4 cup blueberries
2 tablespoons honey
1/2 tablespoon mint, chopped
1/4 cup pomegranate arils
16 ounces nonfat yogurt
4 tablespoons granola
2 tablespoons pistachios
honey, to taste
purple basil, for garnish
freshly torn mint, for garnish


  1. To prepare the compote:  Combine all berries and arils, then add honey and mint.  Mix gently and let sit for 10 minutes before serving.
  2. To prepare the parfait:  Start with a small layer of compote.  Add a layer of yogurt, then add a layer of pistachio and granola.  Continue layering until two-thirds of the glass has been filled.
  3. Sprinkle the top layer of granola and compote together.  Drizzle with honey and add torn mint and purple basil for garnish.
