Yiayia’s Avocado Salad
- Yield 4 to 5 servings
- 3-4 tablespoons Extra virgin olive oil
- 2 -- Avocados
- 1 large Yellow or White onion
- 1-2 -- Limes
- 1 dash Salt
Cut one large onion lengthwise in ½ inch slices
Cook onion lightly in olive oil until soft. You want them tender, but not browned or wilted.
Cut avocado into big chunks and put in bowl. Sqeeze limes over avocado. Add dash of salt.
Pour onions and olive oil over.
Salt to taste.
