Winter Vegetable Chili
- Yield 6 servings
- 2 cups cubed butternut squash
- 2 cups sliced carrot
- 1 cup chopped onion
- 1 can (28 ounces) no-salt-added diced tomatoes
- 4 ounces chopped green chilies
- 1 cup low-sodium vegetable broth
- 2 tablespoons chili powder
- 4 cups black beans, cooked or canned without salt
- Layer ingredients in slow cooker in order listed. Cover and cook on low 8 to 10 hours.
