Winter Vegetable Chili

  • Yield: 6 servings

Ingredients

2cups cubed butternut squash
2cups sliced carrot
1cup chopped onion
1can (28 ounces) no-salt-added diced tomatoes
4ounces chopped green chilies
1cup low-sodium vegetable broth
2tablespoons chili powder
4cups black beans, cooked or canned without salt

Instructions

  1. Layer ingredients in slow cooker in order listed. Cover and cook on low 8 to 10 hours.
