Wilkie’s Jambalaya Rice

Ingredients
8 ounces Oscar Mayer bacon
8 ounces Hillshire beef sausage
1(15 1/2-ounce) can Goya gandules
1 medium yellow onion
2 cloves minced garlic
1/2 medium red pepper
1 teaspoon lemon pepper
1 tablespoon homemade sofrito or goya softrito
1 medium diced potato
1 box Zatarain's Jambalaya rice
1/2 cup Goya medium-grain white rice
3 cups chicken broth
Instructions
Cut bacon into small pieces, slice beef sausage into thin slices, dice red pepper, onion and potato. Saute bacon, sausage, red pepper, onion, garlic, and potato for 8 minutes. Add tsp of lemon pepper and sofrito, mix well. Add 3 cups of chicken broth. Bring to a boil uncovered. Add 1 box of Zatarains Jambalya rice and 1/2 cup of Goya medium grain white rice and mix well. Once all liquid has evaporated. Cover and cook rice at a low simmer for 30 minutes. Serve and enjoy!
