You are here: Home » Recipes » Wilkie’s Jambalaya Rice Wilkie’s Jambalaya Rice Recipe by bvelez9685 Yield 6 servings PrintEmail Ingredients 8 ounces Oscar Mayer bacon8 ounces Hillshire beef sausage1 (15 1/2-ounce) can Goya gandules1 medium yellow onion2 cloves minced garlic1/2 medium red pepper1 teaspoon lemon pepper1 tablespoon homemade sofrito or goya softrito1 medium diced potato1 box Zatarain's Jambalaya rice1/2 cup Goya medium-grain white rice3 cups chicken broth Instructions Cut bacon into small pieces, slice beef sausage into thin slices, dice red pepper, onion and potato. Saute bacon, sausage, red pepper, onion, garlic, and potato for 8 minutes. Add tsp of lemon pepper and sofrito, mix well. Add 3 cups of chicken broth. Bring to a boil uncovered. Add 1 box of Zatarains Jambalya rice and 1/2 cup of Goya medium grain white rice and mix well. Once all liquid has evaporated. Cover and cook rice at a low simmer for 30 minutes. Serve and enjoy!
