Wild Rice Amandine

  • Yield: 8 to 10 servings


1stick butter
1cup raw wild rice
1/2cup slivered almonds
1tablespoon chopped green pepper
1tablespoon chopped chives or onions
1/2pound sliced mushrooms
3cups chicken broth


  1. Put all ingredients, except chicken broth, in heavy frying pan.  Cook until rice turns yellow, stirring constantly.  Put in buttered casserole with broth.  Cover tightly and bake at 350F for 1 hour.
