Wild Rice Amandine
- Yield: 8 to 10 servings
- 1stick butter
- 1cup raw wild rice
- 1/2cup slivered almonds
- 1tablespoon chopped green pepper
- 1tablespoon chopped chives or onions
- 1/2pound sliced mushrooms
- 3cups chicken broth
- Put all ingredients, except chicken broth, in heavy frying pan. Cook until rice turns yellow, stirring constantly. Put in buttered casserole with broth. Cover tightly and bake at 350F for 1 hour.
