Wild Rice Amandine
- Yield 8 to 10 servings
You will get perfect rice amandine everytime when you follow this recipe.
- 1 stick butter
- 1 cup raw wild rice
- 1/2 cup slivered almonds
- 1 tablespoon chopped green pepper
- 1 tablespoon chopped chives or onions
- 1/2 pound sliced mushrooms
- 3 cups chicken broth
- Put all ingredients, except chicken broth, in heavy frying pan. Cook until rice turns yellow, stirring constantly. Put in buttered casserole with broth. Cover tightly and bake at 350F for 1 hour.
