Mix in buttermilk, eggs, butter and walnuts just to blend. Portion spoonfuls onto hot griddle. Cook over medium heat until golden brown, turning once. For each serving; plate 2 griddlecakes. Accompany with a ramekin of walnut butter or with maple syrup. WALNUT BUTTER: Mix 4 ounces chopped walnuts into 1 pound softened butter.
