Whole Wheat Walnut Griddlecakes

Ingredients
- 18 ounces whole wheat flour
- 17 ounces all purpose flour
- 1-1/2 ounce baking soda
- 2-1/2 tablespoon sugar
- 4 teaspoons salt
- 2 quarts buttermilk
- 8 -- eggs, beaten
- 4 ounces butter, melted
- 1 pound chopped walnuts
- -- Walnut Butter (recipe follows)
Instructions

Combine flour, sugar, soda and salt.

Mix in buttermilk, eggs, butter and walnuts just to blend.

Portion spoonfuls onto hot griddle.

Cook over medium heat until golden brown, turning once.

For each serving; plate 2 griddlecakes. Accompany with a ramekin of walnut butter or with maple syrup.
WALNUT BUTTER:

Mix 4 ounces chopped walnuts into 1 pound softened butter.
