White Chocolate, Pecan, Banana Cookies

  • Yield 2 1/2 dozens

No one will guess there's a mashed banana tucked into these cookies.



1 cup butter
1 cup brown sugar
3/4 cup granulated sugar
2 eggs
1 tablespoon vanilla extract
1 banana, mashed
2 1/4 cups all-purpose flour
3 tablespoons cornstarch
1 teaspoon coarse salt
1/2 teaspoon baking soda
4 to 8 ounces white chocolate bar, chopped
1 cup chopped, toasted pecans


  1. Beat butter and sugars until fluffy. Add eggs, one at a time, and beat well. Add vanilla and banana. Add flour, cornstarch, salt and soda. Mix well. Add chocolate and pecans. Mix gently. Chill dough about 1 hour.
  2. Preheat oven to 375F.
  3. Using a small ice cream scoop, drop dough onto baking sheet. Sprinkle with coarse salt. Bake 15 minutes or until browned on edge.
