PrintEmail Ingredients 2 cups finely chopped onions2 cups sliced carrots3 tablespoons chopped parsley3 -- garlic cloves, chopped1 teaspoon thyme1 -- bay leaf8 cups chicken broth2 -- (15-ounce) cans Great Northern beans1 -- red bell pepper, chopped1 -- green bell pepper, chopped2 cups chopped collard greens1 pound kielbasa, sliced1/4 cup (1/2 stick) butter Instructions Combine onions, carrots, parsley, garlic, thyme, bay leaf, broth, beans, bell peppers, collard greens, kielbasa and butter in a large saucepan and mix well. Cook over low heat for 1 hour. Discard the bay leaf. Ladle into soup bowls. Serve warm.
