Watermelon Ice Cubes

A summer staple that's also a fun kitchen project (and snack) for kids.
Serve with water or lemonade. To make watermelon granita, pour mixture in a 9-inch square pan. Stir in chopped mint and freeze. Scrape with a fork to form ice crystals.
Ingredients
- 1 1/2 cups watermelon, seeded and diced
- 1/2 cup water
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- 1 tablespoon sugar
- 24 small mint leaves
Instructions
- Combine watermelon, water, honey, lemon juice and sugar in a blender or food processor. Process until smooth.
- Place mint leaves in ice trays. Pour watermelon mixture into ice trays. Freeze.
