Walnut Trail Mix

2cups California walnut halves
1cup unsalted pumpkin seeds
1cup dried cranberries
1cup chopped dried apricots
1cup banana chips
1/2cup goji or acai berries (optional)


  1. Pre-heat oven to 350F.

  2. Arrange walnuts in a single layer on a large rimmed baking sheet. Bake in the centre of oven until fragrant and toasted, about 8 to 10 minutes. Let cool.

  3. In a large container, combine toasted walnuts with pumpkin seeds, dried cranberries, apricots, banana chips and acai berries (if using).

  4. Store in an airtight container for up to 5 days.
