Walnut Pumpkin Muffins

Ingredients

2 cups buttermilk baking mix
1/2 cup raisin
1/3 cup canned pumpkin
1/4 cup chopped walnuts
1/4 cup sugar
1/4 cup skim milk
2 tablespoons oil
1 teaspoon ground cinnamon
1 -- egg

Instructions

  1. Combine baking mix, raisins, pumpkin, nuts, sugar, milk, oil, cinnamon, and egg in a bowl.  Mix just until blended. 

  2. Pour batter into 12 paper lined muffin cups and bake at 400F until golden brown, 16 to 19 minutes. 

  3. Remove from pan immediately.
